Savoury nose with flickers of the Mornington’s sea swept skins. Mouthfeel is purposefully opulent and rich, allowing the alcohol to pull the weight across the palate with hints of acidity bouncing through. It’s all about the structure with this wine and taming the obnoxious high toned aromatics that Gris so easily wants to transmit. Bringing some of the bitter grapefruit notes to the finish creating a shape that goes from broad to tapered. It’s exactly what Jon Ross and I wanted to make, it was the vision.
Handpicked, whole bunch pressed, barrel fermented and aged in old oak for 7 months.
